Chocolate Layered Cheese Cake

A layered cheesecake with a soft, creamy texture, paired with rich and intense chocolate layers. Each layer delivers a harmonious balance of sweet and savory flavors, creating a delightful experience in every bite. 

 

Chocolate Layer Ingredients:

  • 75 g Colatta Dark Compound
  • 50 g butter
  • 15 g vegetable oil
  • 3 whole eggs
  • 110 g granulated sugar
  • 5 g cake emulsifier
  • 20 g Bendico Cocoa Powder
  • 55 g low-protein flour
  • 3 g double-acting baking powder

 

Method:

  1. Melt the Colatta Dark Compound, butter, vegetable oil, and Bendico cocoa powder using a double boiler. Set aside.
  2. Beat the eggs, granulated sugar, and emulsifier until light, fluffy, and stiff.
  3. Add the sifted flour and baking powder; gently mix until well combined using a spatula.
  4. Pour in the melted chocolate mixture, mix well, then transfer into a pan lined with baking paper.
  5. Place in a preheated steamer and steam for 15 minutes or until fully cooked.

 

Cheese Layer Ingredients:

  • 200 g cream cheese
  • 100 g Haan Fiesta Icing Sugar
  • 4 g vanilla
  • 40 g flour
  • 2 g egg
  • Juice of ½ lemon

 

Method:

  1. Beat the cream cheese and Haan Fiesta Icing Sugar until smooth.
  2. Add the vanilla and lemon juice; mix again.
  3. Add the egg and gently fold, then add the flour and mix until well combined.
  4. Transfer the mixture into a piping bag.

 

Topping Ingredients:

  • 150 g Colatta Dark Spread
  • Almond slices, biscuit crumble, biscuit crumbs, and sprinkles (as needed)

 

Assembly:

  1. Pour half of the chocolate batter into a pan lined with baking paper.
  2. Steam for 15 minutes.
  3. Add the cheese layer batter and steam again for 15 minutes.
  4. Pour the remaining chocolate batter on top, then steam for a further 30 minutes until fully cooked.
