Crookie, the Innovation of Croissant and Cookie

The croissant, a world-famous pastry known for its distinctive shape, has gone through many evolutions. Now, its latest version—the “Crookie,” or croissant cookie—is trending in Paris and around the world.

 

Culinary trends never seem to end. Creativity continues to bring unique new food trends, just like the recently viral creation of the crookie.

 

A crookie is a combination of a croissant and a cookie, the classic American chocolate chip cookie. This hybrid treat is essentially a croissant served with cookie dough as its filling and topping.

 

Technically, croissants fall under the category of viennoiserie, or breakfast pastries. The crookie was “born” in a small bakery in Paris, Boulangerie Louvard, created by a baker named Stéphane Louvard. He wanted to combine their two signature products.

 

From there, the idea of creating the crookie emerged. The innovation received a warm response. The crookie has been on their menu since December 2023. Not only in Paris—now the crookie is known worldwide.

 

In its original version, the croissant is combined with chocolate chip cookies. The method is actually simple: the croissant is sliced in half, then filled with cookie dough. You can use any cookie dough you like. After that, it is baked in the oven. For extra deliciousness, sprinkle your favorite toppings on the crookie!
