Are a variation of the classic cat tongue cookies, made in pairs (sandwich-style) with a filling in between. They are known for their thin, elongated, and crispy shape, with a light texture. Two pieces of cookies are joined together with a filling, creating a sandwich-like form.

 

Cat tongue cookies have an interesting history, as they are not originally from Indonesia. They come from Europe, where they are known as Cat tongue biscuit, or in French as Langues de chat (which means “cat’s tongue”).

 

These cookies were brought to Indonesia during the colonial era by the Dutch. At that time, many European pastry recipes were introduced to the archipelago, and cat tongue cookies became one of the most popular due to their simple ingredients (butter, sugar, eggs, and flour).

 

After arriving in Indonesia, the cookies evolved into a local version that is thinner, crispier, and sweeter. They are now commonly made as festive cookies, especially for Eid celebrations.

 

The most popular fillings for cat tongue sandwich cookies include chocolate, vanilla cream, cheese, jam, and even modern flavors like matcha or caramel.

 

They are called “sandwich” cookies because of how they are assembled: one cookie as the base, another on top, and a filling in the middle—similar to a bread sandwich.
