Kaffir Lime Soft Cookies

Bored of the same old cookies? Try making a modern cookie variation: Coconut Lime Cookies. These cookies combine shredded coconut and lime, giving them a deliciously rich and refreshing flavor with a wonderfully fragrant aroma.

 

Cookies Dough Ingredients:

150 g butter

100 g Haan Palm Sugar

50 g granulated sugar

1 egg

1 tsp vanilla extract

15 g honey

230 g low-protein flour

10 g Bendico Cocoa Powder ND

1 tsp baking soda

1 tsp baking powder

½ tsp salt

30 g whole almonds (chopped)

20 g soybeans (roasted & chopped)

100 g Colatta Compound Choco Chips

3 kaffir lime leaves (roasted & chopped)

How to Make:

  1. Soak the soybeans for 3 hours, then roast and chop them.
  2. Beat the butter, granulated sugar, and Haan Palm Sugar until pale and slightly fluffy.
  3. Add the egg and vanilla extract, then mix until well combined.
  4. Add the dry ingredients: low-protein flour, Bendico ND, baking soda, and salt. Mix until incorporated.
  5. Lastly, add the Colatta Choco Chips, chopped almonds, roasted soybeans, and kaffir lime leaves. Mix well.
    Store the dough in the freezer until firm.

 

Filling Ingredients:

100 g Colatta Compound White

100 g cream cheese (room temperature)

20 g Greek yoghurt

Zest of 1 kaffir lime

How to Make:

  1. Mix the cream cheese until smooth.
  2. Add the Greek yoghurt and the melted Colatta Compound White into the cream cheese.
  3. Add the grated kaffir lime zest into the mixture.
  4. Store the filling in the freezer until set. Then portion into 15 g balls and freeze again.

 

Assembly:

  1. Weigh out 50 g of dough.
  2. Insert the frozen filling ball into the dough, shape into a ball, and flatten slightly.
  3. Arrange on a baking tray and bake in the oven at 160°C for 12–15 minutes.
